Lacto-Fermentation

The unique flavors in our hot sauce are melded together through the process of lacto-fermentation.  This age old technique has been used to preserve food around the world for generations.  Lacto-fermentation begins when Lactobacillus bacteria - found naturally on all plants - is given the environment to turn natural sugars into lactic acid. This process helps prevent the growth of harmful bacteria and preserves the food. Lactobacillus bacteria are known to help promote healthy digestion, intestinal health, and maintain the natural balance of microflora needed for your overall vitality.

This same process can be mimicked using vinegar based pickling techniques - however, we feel that vinegar washes out the subtleties of the flavors.  A vinegar pickling method also lacks any healthy bacteria.  We at Resurgam Hot Sauce are proud to produce our hot sauce using the lacto-fermentation method because of its long history, health benefits, and most importantly the unforgettable great taste!
